Welcome to Paulo Nicolas Airaudo our new Head Chef. Paulo was sous chef to Adam Simmonds at Danesfield House in Marlow where they held a Michelin Star and 4 AA Rosettes.   The first thing Paulo has done is close Ducks Restaurant!!!!!

Don’t panic!  You seem to like the changes so far.  All that has happened is that we have concentrated our efforts into one room and effectively combined both Ducks and Donald’s menus under the Donald’s banner, allowing you greater quality and flexibility through the winter.  You will see the whole menu under Donald’s.

The menu below is the right half of the new Bistro menu and I think it’s the best food we have cooked for you in my restaurants for many a long day – a lot of you seem to agree.  Paulo’s cooking style is simple but very accurate.  Simple ingredients with only three or four flavours but they combine beautifully with superb textures and presentation. The menu price is deliberately low to encourage you out to try Paulo’s food; it’s designed for you to manage a three course meal which, according to your feedback, is a popular idea.  You can order a couple of sides if the mood takes you as they do not take away from the dishes.  If in doubt there is a waiter to help with advice and Malcolm and Paulo are on hand for you too!

The aim is to re-open Ducks in the New Year but at a much higher level than ever before with the current menu remaining in Donald’s……Watch this space.

The green room, which Ducks inhabited, with the lovely fire is still available for private parties and AFTERNOONTEAS which we will be starting very soon.  Belaine, Paulo’s wife is a very good pastry chef!

There will be some small dinners over the next few months for you to try combining a glimpse of Paulo’s future ideas, cooking skills and the great wines in our cellar.  If you would like information on these please and you will be sent details as they come available.

    Sitting in the bistro at Duck’s relishing the new menu. Started with a lovely creamy Jerusalem artichoke soup, toasted artichoke on a spot of chestnut purée served in a light white soup. Followed by perfect venison, red and tender served on salsify purée with wild chanterelle and a light sauce. The potato mash was the creamiest I have had in a while with a hint of nutmeg.
